- Use a standard kitchen oven, no microwaves or toaster oven.
- Highly Recommended: a removable dial oven thermometer.  BLP never bakes without an oven thermometer. Neither should you. If you don't have one, buy one from us for $2 (we sell it at cost so your saltenas come out perfect every time).

PRIOR TO BAKING

Preheat your oven to 500 degrees, use a removable thermometer to verify temperature.
- While the oven is preheating, tray out salteñas onto a standard sheet pan lined with a silicon mat or parchment paper.
- Salteñas should be placed with a minimum of 2 inches of space in between them. This will allow for even cooking. No more than 6 salteñas per baking cycle.

Start

Place salteñas in 500°oven. Don't trust your oven! They are often wrong, use a removable oven thermometer to validate temperature. The first 3-5 mins are the most important part of the cooking process. The oven must be at 500° in order to bake the shell before the filling has a chance to burst through the shell.

At 3-5 mins
The braid should have turned a white color (next color is a light brown). Check your thermometer. The oven needs to be at 400 after the braid turns white.

At 10 mins
The saltena shell should by now be mostly baked. If one side of the tray looks more baked than the other, than rotate the trays. Opening the oven door decreases the temp of the oven, so open and close it quickly.

At 20-25 mins
Depending on your oven, salteñas should be done baking around the 20 minute mark. The sides of the salteña should be golden brown and NOT bright yellow.  If so, continue baking at 400 degrees until they reach the desired color.

BEFORE EATING!
Salteñas are SCALDING HOT right out the oven.  Let them cool for 6-8 mins prior to eating!
